Allicin is extremely good for the body and is the reason that people who eat garlic raw develop the dreaded garlic breath, as the compound seeps into the organs of the body, including the lungs. As mentioned, allicin is quite unstable, and cooking freshly chopped garlic will destroy the allicin straight away. For this reason, it’s a good idea to chop the garlic up finely and allow it to sit for around 10 minutes before adding it to the heat.
